Farmers market + tapas bar.
Concept is similar to La Boqueria in Barcelona, but on a small scale.
200 sqm location in the central market of the Old Town in Brasov, Transylvania, Romania.
In the morning there is 80%market + 20%breakfast. At noon it is 50% market + 50% lunch. In the evening it is 20% market + 80% dinner (just small bites, incorporating the products from the market).
The market sells only agricultural products (meat, cheese, fruits&vegetables, bread) from selected farmers. The buyer can identify the farmer (video materials) and can trace back the origin of the product (he can meet occasionally a representative of the farm in the market and he is offered the option to visit the farm).
There will be products from x farmers sold in the market, but, by rotation, every day is another farmer present in the market personally, so that the customers can talk to him. On the day the farmer John is present, "Ograda" (the farmer's yard) becomes "Ograda lui John "(John's yard) in our marketing materials.
